The Anaheim pepper is one of New Mexico's state vegetables. It is commonly used in southwestern cuisines and is loved for its flavor and mild heat. Its Scoville Heat Units range from 500 to 2,500 units. This pepper grows well in warmer temperatures with 8 to 12 hours of sunlight. Approx. 75 to 80 days to maturity.
