Arugula
Arugula is a popular green among many gardeners. It has a spicy, peppery, mustard-like flavor used in salads, sandwiches, and even pizza! Arugula is cold hardy and usually planted in early spring or late summer for a fall harvest. Succession plant every 2-3 weeks until the heat of summer arrives. Great for a second planting in late summer for a fall harvest. It is ready to harvest in as little as four weeks and can tolerate some frost. For best results allow 4 to 8 hours of sunlight. Approx. 60 days to maturity. Photo courtesy of Baker Creek.
